1/2 can of Fortune Baby Abalone, diced
3 slices of bacon, diced
1 onion, diced
3 medium-sized potatoes, peeled and diced
2 stalks of celery, chopped
1 carrot, sliced
2 tbsp all-purpose flour
1 cup milk
½ cup heavy cream
Chopped parsley (garnish)
½ cup of Fortune Baby Abalone stock
1 cup chicken stock
½ tsp dried thyme
1 bay leaf
½ tsp salt
¼ tsp black pepper
Heat a large pot and sauté the diced bacon until crispy. Set aside.
In the same pot, add the sliced carrots, diced onions, chopped celeries and cook for 2-3 minutes. Add the all-purpose flour, and sauté for another minute.
Pour in the Abalone stock, chicken broth, bay leaf, dried thyme, salt, and black pepper. Bring the chowder to a boil.
Add the chopped potatoes, diced Baby Abalone, milk and heavy cream.
Bring to a boil then reduce the heat and cover. Cook for about 10-15 minutes.
Garnish with crispy bacon and chopped parsley.
