Fortune Braised Abalone with Longevity Noodles

INGREDIENTS

1 can of Fortune Braised Abalone
1 kg of Chicken
15 - 20 pcs of Chicken feet
350g Lean pork

2 bundles of Longevity Noodles (Mee Sua)
1 tbsp Diced asparagus
1 tbsp Diced carrot
Chopped chye sim
8 Shallots

SEASONINGS

1 tbsp of Light Soy Sauce
A pinch of Salt
Sesame Oil

Step By Step Instructions

STEP 1

Cook the chicken, chicken feet and lean pork in boiling water for 5min. Set aside and drain away water.

STEP 2

To prepare the soup, place the chicken, chicken feet and lean pork in a pot with 3 litres boiling water. Add in Light Soy Sauce and some Abalone stock. Double boil for 4 hours.

STEP 3

Boil the noodles separately in boiling water for 2mins. Drain away water and set aside.

STEP 4

Add noodles, Asparagus, Carrots, Chye Sim and a pinch of salt into the soup mixture and cook for 5 mins.

STEP 5

In a heated wok, use Sesame Oil to stir-fry shallots until fragrant. Set Aside.

STEP 6

Serve noodles with ingredients and top it off with Fortune Braised Abalones. Garnish with shallots before serving.
