80 - 100g of Fortune Dried Scallops in XO sauce
4 cups cooked rice, overnight
3 tablespoons oil, divided
4 cloves thinly sliced garlic
1 medium onion, diced
1 scallion, chopped
1 teaspoon Shaoxing wine
1 teaspoon salt
1 tbsp light soy sauce
pinch of fresh ground white pepper
Cook rice with a little lesser water than usual. Then leave it to cool, or overnight.
Heat up the pan with some cooking oil, add in the chopped garlic and stir fry until golden brown.
Add in the overnight rice and mix it well. At the same time, break all the clumps of rice.
Beat the eggs in a bowl. Then pour it evenly over the rice.
Mix well and stir fry until all the eggs are cooked and the rice are dry.
Season with salt and pepper to taste, and then add in Fortune Scallops and shallots.
Toss for 30 seconds and serve with the fried garlic sprinkled over the top.
