Fortune Abalone 213g
2 tbsp oil
8 Fortune White Flower Shiitake Mushrooms, soaked overnight
2 cups shiitake mushroom soaking water
50g fish maw
½ cup abalone stockter)
1.5-inch piece ginger, sliced
1 small carrot, julienned
Small handful of wood ear mushrooms
1500ml chicken broth
Cornstarch slurry (3 tbsp cornflour & 5 tbsp water)
1 tbsp Shaoxing wine
1 tbsp Fortune Abalone Sauce
Soak 50g of fish maw in hot water and a small handful of wood ear mushrooms in warm water for 30 mins each.
Cut the softened fish maw into smaller pieces.
Heat 2 tbsp of oil in a pot. Add in the ginger and stir-fry till fragrant.
Add the White Flower Shiitake Mushrooms, wood ear fungus and carrot. Stir-fry for 2 mins.
Pour in the chicken broth, abalone stock and shiitake mushroom soaking water.
Bring to a boil then add the fish maw and cook for 25 mins over medium-low heat.
Add shaoxing wine, Fortune Abalone Sauce and the cornstarch slurry. Mix well.
Lastly, add the sliced abalone and cook for another 1 min.
Ready to serve!
