1 can Fortune Mala Baby Abalone
2-3 tbsp Fortune Dried Scallop in XO Sauce (Spicy)
2.5 cups cooked rice, overnight
3 eggs, beaten
2.5 tbsp oil
3 Dried shiitake mushrooms, soaked overnight, finely chopped
2 spring onions, finely chopped
2 cloves garlic, minced
1 tsp shaoxing wine
4 tbsp mala abalone gravy
2 tbsp mushroom soaking water
1 tsp sugar
Open 1 can of Mala Baby Abalone and cut them into small pieces. Set aside the gravy.
Combine all the seasoning sauce ingredients and mix well.
Heat 1 tbsp of oil in a wok, add in garlic and stir fry for 30 sec. Add the shiitake mushrooms, Mala Baby Abalone and seasoning sauce. Cook for another 1 min. Remove from heat and set aside.
In a clean work, add the rice and toss around to break up the clumps. Move the rice to one side and heat 1.5 tbsp of oil in the same wok then pour in the beaten eggs. Stir quickly to combine and cook for 2 min.
Add the stir-fried mixture and Dried Scallop in XO Sauce. Cook for another 1 min.
Lastly, add the spring onions and give it a quick mix.
Plate the fried rice and it’s ready to serve!
